SOUR LENTIL SOUP

MATERIALS

  • 1 cup of Hasata Mardin Red Lentils
  • 1/2 cup of Hasata Osmancik Rice
  • 2-3 cloves of garlic
  • 1/2 tablespoon of tomato paste
  • 1/2 tablespoon of pepper paste
  • Juice of 1 lemon
  • 6-7 cups of water or chicken broth
  • 2 teaspoons of salt
  • 2 tablespoons of butter
  • 2 tablespoons of olive oil
  • 1/2 tablespoon of dried mint
  • 1 teaspoon of red pepper flakes

PREPARATION

    • 1.Place the Hasata Mardin Red Lentils and Osmancik Rice in a strainer and rinse them thoroughly under running water. Drain well.
    • 3.In a pot, add the rinsed lentils, rice, and 4 cups of water, then bring to a boil.
    • 4.Reduce the heat and simmer until the ingredients are softened. Stir in the diluted tomato paste, lemon juice, salt, and crushed garlic.
    • 5.Adjust the consistency by adding more hot water if needed. Simmer for another 5-6 minutes and then remove from the heat. For the spiced oil, heat butter and olive oil in a skillet.
    • 6.Add the dried mint and red pepper flakes, simmer briefly, and then remove from the heat.
    • 7.Pour the spiced oil over the prepared soup and stir gently.
    • Serve the soup hot.
