1.Take the Hasata Kırşehir Ram Chickpeas into a bowl. Add enough cold water to cover it and leave it for 1 night.
2.Wash and drain the water the next day.
3.Add chickpeas and 3 glasses of water into the pressure cooker and close the lid.
4.Turn down the whistle after it blows and boil for 20 minutes.
5.Take the boiled chickpeas from the cooker and drain.
6.After the drained Hasata Kırşehir Ram Chickpeas cool down, put them in a food processor.
7.Add the onion you cut into four, the garlic, the parsley, the lemon zest, 2 tablespoons of extra-virgin olive oil, salt and spices and blend until pureed.
8.Take small pieces from it and roll into balls. Arrange the falafels on the baking tray covered with baking paper.
9.Spread olive oil on it and bake in a preheated 200 degree oven until golden brown (approximately 20 minutes). Serve hot.
10.Note: If you wish, instead of cooking in the oven, you can fry it in the oil you have heated.
